i have had “try spaghetti squash” on my to-do list for at least 3 years, but for some reason have never gotten around to it.
and man, have i been missing out! this stuff is awesome! even the fella gave it his seal of approval – which really says something.
to cook the squash, i cut it in half lengthwise, put it facing down in a baking dish with about half an inch of water, and baked at 350 degrees for 40 minutes. it came out perfectly – cooked completely but still a little crunchy. while it was cooling, i browned some ground beef and mixed in some prego. then i shredded the squash with a fork, poured the meat sauce over the “noodles” and topped with mozzarella. delicious, filling, and only 360 calories!
we only ate the “noodles” from one half of the squash, so i wrapped the rest in plastic wrap, put it in a ziploc, and put it in the freezer for an easy, quick dinner another night.
