we are mostly settled into the new place (75% unpacked in 48 hours!), just in time to invite some friends over for a 4th of july barbecue. the fella has been itching to try smoking a brisket again; his first attempt was pretty good, and the second was TERRIBLE. he’s been nervous about trying it ever since, since they’re so expensive and take so long. but he felt ready, so he picked up a 10 pound brisket and made a mop sauce that contained apple juice, beer, hard cider, coffee, cola, and various other ingredients. he put the meat on at about noon, and had to check it every 8 minutes throughout the day. the thing was FINALLY ready at NINE O’CLOCK! it was well worth the wait; this was one of the best pieces of meat i have ever eaten! it was more moist than i thought was possible and the flavor was great. the 4 of us ate a ton, but we will still have leftovers all week!
